Background

Project started In October of 2016: A 25 year old restaurant wanted to expand their brand called Los Hermanos Restaurant, and develop a new concept that would showcase their original flavors of the Dominican Republic. Mama Mecho learned how to cook for her family in the Dominican Republic and they still keep the original recipes. The brothers ( Ray and Aris) decided to expand the model that would appeal to the younger generation, and to develop a fast casual concept that can be franchised. Clients needed to partner with a restaurant developer, to take charge of the concept development through operations and opening.

Existing Conditions

A new development in the Fort Washington area. MDK will occupy a 70-seat inside and 30 seats outdoor in a corner unit at The Shops at Dakota Crossing, which opened in 2012. Directly across the parking lot on one side is the highest volume Costco in the nation. A vanilla box with 2451 square feet and 80 days to complete the project, after the concept was developed.


Program Objectives

To develop a new concept that would facilitate and embrace the Dominican culture. Creating a franchise model that would have a trendy environment but would still add old world taste.


Services

  • Branding, (naming and trademark) and design logo.
  • Creating all new recipes from the original menu, plat costing, Menu design.
  • Develop a business plan, Architectural, Interior Design, Food Service, MEP engineering drawings for permits, Cost Analysis, Bidding, Construction management, Permit expediting, operations manuals, operations set up. Purchasing of all items in the restaurant.
  • Training and staffing for over 40 employees. Maintain a board seat and ownership for managing the restaurant.

Conclusion

Opened in August 2019. Trendy, modern, fast casual model. Ready for franchising. Opened within budgets, and on schedule.
